KAREN'S OATMEAL PANCAKES 
1 c. buttermilk or sour milk
1 c. uncooked quick rolled oats
1 egg, beaten
1/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1 tbsp. brown sugar
1/4 c. flour
1 tbsp. butter, melted

Combine buttermilk and oats in a bowl. Cover, refrigerate overnight. Next morning, add remaining ingredients; mix well. Bake on hot greased griddle.

Note: To sour 1 cup of milk, add 1 teaspoon lemon juice or vinegar and mix well.
