MINT MELT AWAYS 
3 egg whites
1 tsp. cream of tartar
1 c. sugar
1/4 c. Creme de Menthe
1 c. chocolate chips

Preheat oven to 250 degrees. Beat egg whites with cream of tartar until very stiff; add in sugar and cream de menthe. Mix in chocolate chips. Drop by teaspoonfuls on cookie tins lined with parchment papers. Place in oven and turn off heat. These cookies dry out rather than bake. Let stand overnight.
