MOCHA WALNUT COOKIES 
12 oz. chocolate chips
2 tbsp. instant coffee
2 tsp. boiling water
1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt
1/2 c. brown sugar
1/2 c. butter
1 egg
1/2 c. chopped walnuts

Melt 1/2 cup chocolate chips over hot water, allow to cool. Dissolve coffee in hot water, set aside. Combine flour, baking soda and salt. In a large bowl beat butter and brown sugar until creamy. Blend the egg into the cooled chocolate and add to the butter mixture. Gradually add flour mixture. Add remaining chocolate chips and nuts. Drop by teaspoonfuls on an ungreased baking sheet. Bake at 350 degrees for 10 to 12 minutes. Cool 2 to 3 minutes before removing to drying racks.
