CARROT MUFFINS | |
1 3/4 c. flour 2 1/2 tsp. baking powder 1 tsp. salt 2/3 c. milk 1/3 c. vegetable oil 1 egg 1/3 of 1/2 c. honey 2 med. carrots Preheat oven to 425 degrees. Combine flour, baking powder, and salt. Set aside. In a blender, combine milk, vegetable oil, egg, and honey. Grate carrots in a Cuisinart and add to blender mixture. Pour this over dry ingredients and mix until moistened. Fill greased muffin pans 2/3 full. Bake about 25 minutes. |
