BROCCOLI-BUTTERMILK SOUP 
1 med. stalk broccoli, chopped (9-12 oz.)
1 red onion, chopped
2 cloves garlic, chopped
1 shallot, chopped
2 c. buttermilk

Combine the broccoli, onion, garlic, and shallot in a steamer basket, and steam over boiling water until broccoli is tender, about 12 minutes. Transfer vegetables to a food processor or blender, and blend until pureed. Then with the motor running, slowly pour in the buttermilk. Don't over process the soup or it will be too frothy. If necessary, reheat on low, stirring occasionally; don't boil. 4 servings.
