ZUCCHINI FANS WITH HERB BUTTER 
4 sm. zucchini, 6" long
1 tbsp. bread crumbs
2 tbsp. grated Parmesan cheese
2 tbsp. butter
1 tbsp. olive oil
1/4 tsp. dried tarragon
1 tbsp. minced fresh parsley
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. water

Preheat oven to 400 degrees. Cut zucchini lengthwise into 4 thick slices down to within 1/2 inch of the stem, do not cut all the way through.

In a small saucepan melt butter; add olive oil, tarragon, parsley, salt and pepper. Separate slices of zucchini to form a fan. Brush each piece with the melted herb butter. Place zucchini in a large baking pan and add the 1/4 cup water. Bake for 20 minutes or until zucchini is tender.

While baking baste several times with the herb butter. Combine bread crumbs and Parmesan cheese; mix well. Sprinkle zucchini fans with bread crumb mixture and broil for 1-2 minutes, or until golden brown. 4 servings.
