SPINACH BALLS 
1 (10 oz.) pkg. frozen chopped spinach, well drained
1 1/2 c. herb seasoned stuffing mix (Pepperidge Farm)
1 med. onion, diced fine
3 lg. eggs, well beaten
7 tbsp. melted butter or sweet butter
1/4 c. grated Parmesan cheese
1/2 tsp. pepper
3/4 tsp. garlic salt
1/4 tsp. thyme

Do not cook spinach. Drain and squeeze excess moisture. Chop onion and measure all other ingredients into bowl. Add spinach. Mix until thoroughly blended. Shape into 1 inch balls and place on cookie sheet, 1 inch apart. Bake at 325 degrees for 20 minutes. Serve hot.

Makes 3-4 dozen.

You can make these up and quick freeze them before baking; then place in airtight container and remove from freezer and bake when needed.
