BAKED CHICKEN PARMESAN 
1 c. crushed Ritz crackers
1/3 c. Parmesan cheese, grated
1/4 tsp. ground oregano
1/4 tsp. pepper
Salt to taste
1 clove garlic, minced
3/4 c. melted butter
4-6 chicken breasts, skinned and split

Combine first 5 ingredients; set aside. Lightly saute garlic in butter. Dip chicken pieces in butter. Then roll each piece in bread crumb mixture. Place chicken in 13 x 9 x 2 inch pan; sprinkle with remaining crumb mixture and pour on remaining butter. Bake at 350 degrees for 1 hour or until golden brown. Yield: 8-12.
