STUFFED FILLET OF SOLE 
1 lb. fillet of sole
1 c. Italian seasoned bread crumbs
1/2 c. grated Parmesan cheese
4 tbsp. capers
1 green pepper, diced
1 red pepper, diced
1 onion, diced
1/4 c. olive oil or cooking oil
Toothpicks

In skillet pan, saute diced peppers, onions. Add bread crumbs and Parmesan cheese to the mixture.

Take fillets, shiny skin side up, and add above to each fillet in the middle. Roll up each fillet and secure with a toothpick. Add some butter to the top of each fillet. Bake in 375 degree oven approximately 15-20 minutes.
