SUMMERY SAUERKRAUT SALAD 
1/4 c. cider vinegar
1/4 c. oil
1/4 c. sugar
2 c. sauerkraut, rinsed & well drained
1 sm. green pepper, chopped
1 sm. onion, finely chopped
1 (4 oz.) jar pimento, drained & chopped
1/2 tsp. celery seed
1 sm. carrot, shredded

1. Put vinegar, oil and sugar in small saucepan. Bring to boil quickly then remove from heat.

2. Put drained sauerkraut in non-metallic bowl and pour on hot dressing. Add green pepper, onion, carrot and pimento; toss. Add celery seed, if desired. Chill 3 hours. Serves 6.
