4 tbsp. butter
4 tbsp. sugar
4 egg yolks
Cornstarch
8 oz. caramel topping
3 oz. shredded coconut

Beat the butter until soft. Add the sugar. Mix in the yolks. Add enough cornstarch to make a soft dough. Roll the dough out to about 1/4 inch. Cut with a biscuit cutter. Place on greased cookie sheet and bake at 375 degrees for about 12 to 15 minutes. Let cool. Spread cookie with caramel and make sandwich with another cookie pressing them together to allow a little caramel ooze. Roll in coconut.
