ZUCCHINI CAKES WITH CHEESE SAUCE 
3 c. grated zucchini
1 c. finely ground soda crackers
3 chopped green onions
1/2 tsp. each: salt, pepper & garlic salt
3 beaten eggs
1/2 c. diced green pepper

CHEESE SAUCE:

2 tbsp. each: flour, butter
1 c. milk
1/2 c. grated cheddar cheese
2 dashes Tabasco
Dash of Worcestershire sauce
1/2 c. slivered almonds

Mix all zucchini cake ingredients together thoroughly. Fry on greased griddle 2 to 3 minutes per side, browning well.

SAUCE: Melt butter. Add flour and cook about 2 minutes creating a roux. Add milk, cook until thickened. Add cheese, Tabasco, Worcestershire sauce. Stir until smooth. Stir in almonds. Serve over cakes.
