SCALLOPED HAM AND EGGS | |
Great for leftover ham! 2 cups cooked ham 5 hard boiled eggs, peeled and sliced 2 cups white sauce (recipe below) rice bran flakes or buttered bread crumbs parsley and paprika (optional) In a food processor, or with a cleaver, coarsely chop cooked ham. Make 5 hard boiled eggs, let cool then peel and slice. Prepare white sauce. White Sauce: 4 tbsp. all-purpose flour or Wondra 4 tbsp. (1/2 stick) softened butter 1 3/4 cups milk 1 tbsp. Heinz chili sauce In a bowl, mix ingredients together. Set aside. Assembly: Arrange a layer of chopped ham in baking or casserole dish, then a layer of sliced egg. Cover with white sauce, then repeat layers until all ingredients are used. Sprinkle top with rice bran flakes or buttered bread crumbs and a pinch of parsley and paprika, if desired.
