PIEROGIE CASSEROLE 
6-8 lasagna noodles, cooked & drained
1 lg. onion
1 stick butter (to simmer onion in)
6 lg. potatoes, mashed
1/2 lb. Velveeta cheese, diced & melted in mashed potatoes

Add 3/4 of onion and butter mixture. Salt and pepper into potatoes.

In 9 x 13 inch buttered pan, lay 1/2 of noodles and spread with potatoes. Add other half of noodles and cover with butter and onions. Cover with foil. Bake at 350 degrees for 30 minutes. Let sit 15 minutes. Serve as you would lasagna.
