BLACKENED SNAPPER | |
2 tbsp. sweet paprika 1 tbsp. salt 1 tsp. onion powder 1 1/2 tsp. garlic powder 1/2-1 1/2 tsp. cayenne pepper 2 tsp. lemon pepper 1 1/2 tsp. basil (optional) Mix spice and store in lidded jar. This makes several batches. Approximately 3 lbs. snapper (or other firm fleshed white fish, catfish is good!) 1/2 stick butter 1/4 c. olive oil or vegetable oil Heat cast iron frying pan at least 10 minutes over high heat. (Open the windows or, better yet, do this outside over the barbecue!) Cut fillets in half. Melt butter 2 minutes with oil. Dip fish in oil mix, then dredge in spice mix. Fry in very hot pan, just until done; several minutes on each side. Serve with cold drinks with a huge green salad! NOTE: 1/2 teaspoon cayenne is great for kids. Sprinkle more on the fish just before frying if you like yours spicy! |
