RISE AND SHINE MUFFINS 
1 egg
1/2 c. orange juice
1/4 c. salad oil
1/4 tsp. almond flavoring
1/2 tsp. vanilla
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 c. chopped cranberries
Rind of 1/2 orange, grated

Heat oven to 400 degrees. Line muffin pan with 12 paper liners. Beat egg. Add orange juice, salad oil, almond and vanilla. Beat until frothy. Add sugar. Mix flour, baking powder and salt and add to wet ingredients. Fold in cranberries and rind. Fill muffin cups 2/3 full. Sprinkle with granulated sugar. Bake 20-25 minutes.
