APPLE CAKE 
2 lg. eggs
1 1/2 c. sugar
1 c. vegetable oil
2 tsp. vanilla
2 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
2 1/2 c. peeled, cored, chopped tart apples
1 c. chopped walnuts
1 c. yellow raisins

Beat eggs and sugar together until well blended. Stir in oil and vanilla and beat until creamy. Sift dry ingredients together and blend into the creamed mixture. When well blended, stir in apples, walnuts and raisins. Pour into greased and floured Bundt pan. Bake at 350 degrees for 1 hour or until edges pull away from sides of pan. Cool in pan or wire rack.
