Dip into oil and a mixture of bread crumbs and cheese. Layer into baking dish. Saute can of tomatoes and one small onion in frying pan to which 1 tablespoon oil has been added. Add basil, oregano, garlic powder, salt, pepper to taste. Simmer approximately 20 minutes.
Pour tomato mixture over eggplant. Bake at 375 degrees until eggplant is tender. Microwave approximately 30 minutes, rotating 3 times while cooking. Mozzarella cheese can be placed on eggplant before pouring the tomato mixture over if desired.
