MINI CHEESECAKES 
24 cupcake liners
24 vanilla wafers
2 (8 oz.) softened cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
1 can pie filling

Line cupcake pan with liners. Place a wafer in bottom of liner. Beat cream cheese, sugar, eggs, lemon and vanilla until fluffy. Fill liners 3/4 full. Bake at 375 degrees for 15 to 20 minutes or until set. Top with spoonful of pie filling. Chill.
