LINDA'S CHICKEN GUMBO 
1 chicken
1 c. onion, cut up
1 c. celery, cut up
1 c. bell pepper, cut up
1 pkg. Hillshire Farm beef sauce
1 can Ro-Tel tomatoes
1 can tomatoes
2 cans sliced water chestnuts
2 cans chow mein vegetables
1 pkg. Cajum gumbo mix

Cook chicken, onion, celery, and bell pepper in four quarts of water until tender. Remove chicken and debone.

Add sliced sausage to stock. Add other ingredients and cook. Add gumbo mix 1/3 package at a time, mixed in small amount of cold water.

Serve over rice. 2 pounds peeled shrimp can be substituted for sausage.
