MANDARIN ORANGE SALAD 
1/2 head red leaf lettuce
1 c. chopped celery
1 tsp. parsley
2 green onions, chopped, tops included
1 c. mandarin orange pieces, canned
1/2 c. caramelized almonds (take 2 tbsp. sugar in heavy skillet and stir in almonds and heat until toasty brown)

Mix above together (not too early before serving). Coat with dressing below:

1/2 tsp. salt
2 tbsp. sugar
2 tbsp. white vinegar
1/4 c. oil
1/4 tsp. Tabasco (optional)

Microwave above briefly to melt sugar.

Since microwave ovens vary in power, you may need to adjust your cooking time.
