JOHN MOM'S ENCHILADA CASSEROLE | |
2 lb. ground beef 1 lg. can enchilada sauce 2 cans ranch style beans Chili-o seasoning to taste 1 doz. corn tortillas Olives, optional 2 c. grated Cheddar cheese 1 c. grated Monterey Jack cheese Stir fry the hamburger until crumbly, drain the grease off. Add sauce, beans, seasoning and olives to the meat. Cut into bite size pieces, the tortillas, and add to mixture. Spray oblong baking dish with non-stick spry like Pam. Layer mixture and cheese. Top with cheese. Bake at 350 degrees for 1 hour. This can be made up ahead of time and either refrigerated or frozen until needed. |
