BAGELS 
2 pkgs. dry yeast
4 1/4 - 4 1/2 c. flour
1 1/2 c. lukewarm water
3 tbsp. sugar
1 tbsp. salt

Preheat oven to 375 degrees. Dissolve yeast in warm water. Combine ingredients and make dough like bread. Knead until all dry ingredients are mixed well. Shape into balls about the size of a medium tomato. Form into doughnut shapes and push hole in middle. Boil formed bagels (after rising for 20 minutes) in 1 gallon of water and 1 tablespoon sugar. Drain. Bake at 375 degrees on a cookie sheet for 35 minutes until brown. Keep wrapped to preserve freshness after bagels have cooled. Makes 6 to 8 bagels.
