GUMBO 
3 lb. chicken, cut up
Salt and pepper
3 tbsp. bacon fat
1/2 onion, chopped
4 c. sliced okra (cooked or canned)
1/2 c. chopped celery
1/2 c. chopped green pepper
1 1/2 c. chopped tomatoes
Pkg. of 6 hot sausage
3 lbs. shrimp
3 c. boiling water
1 1/2 tsp. salt

Sprinkle chicken with salt and pepper. Melt in large pan 3 tablespoons bacon fat. Brown chicken thoroughly and set aside. Add to pan 1/2 onion, chopped; cook until yellow. Add okra, celery, green pepper. Cover and cook 15 minutes. Add chicken pieces and tomatoes, boiling water and 1 1/2 teaspoon salt. Cut and fry package of sausage. Add along with 3 pounds shrimp. Cook until chicken is tender.
