OYSTER PAN ROAST 
2/3 c. chopped shallots
1/3 c. chopped celery
1 1/2 sticks butter
2 cloves garlic, crushed
1/2 c. flour
1 c. oyster liquid
Dash Tabasco sauce
2 cans sliced mushrooms
4 dozen oysters
Salt & pepper to taste
Grated Parmesan cheese
Bread crumbs

Saute shallots and celery in butter over medium heat. Add garlic. Blend in flour and cook slowly 3 to 5 minutes. Blend in oyster liquid and dash of Tabasco sauce. Continue cooking until mixture begins to thicken. If the oysters are very large, they may be cut in halves. Add mushrooms and oysters; heat through. Salt and pepper to taste. Pour mixture into casserole. Sprinkle with grated cheese and bread crumbs. Bake at 450 degrees until hot or put under broiler until brown on top, about 10 minutes. Serves 6.
