FRUITFUL MUFFINS 
1 c. oatmeal
1 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. cinnamon
1 c. skim milk
1/2 c. mashed ripe banana (about 1 lg.)
1/2 c. raisins
1/4 c. vegetable oil
1/4 c. brown sugar
1 egg white

Heat oven to 400 degrees. Line 12 muffin tins. Combine oats, flour, baking powder and cinnamon. Add combined remaining ingredients. Mix just until all are moistened. Fill each tin 3/4 full. Bake 20-25 minutes or until golden brown. 1/2 cup chopped apricots, dates or prunes may be substituted for raisins. Makes 1 dozen. Low in cholesterol.
