RHUBARB BARS 
2 1/4 c. flour
1 c. whole wheat flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1/2 tsp. allspice
3 eggs
1 c. vegetable oil
1 3/4 c. firmly packed brown sugar
2 tsp. vanilla
4 c. rhubarb, diced into 1/4 inch pieces
3/4 c. chopped walnuts

GLAZE:

1 1/2 c. powdered sugar
1 tsp. vanilla
Half and half
Grated rind of 1 orange
Pinch of salt

To make bars:

1. Heat oven to 350 degrees. Butter a 15x10x2 inch jelly roll pan.

2. Sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg and allspice.

3. In large bowl, beat eggs, oil, brown sugar and vanilla with an electric mixer until fluffy and smooth. Fold in dry ingredients all at once until just moistened. Stir in rhubarb and walnuts. Mixture will be stiff.

4. Spoon batter into buttered pan. Bake for 30 to 40 minutes or until firm to the touch in the middle.

5. To make glaze: put sugar, vanilla, orange rind and salt in a bowl. Add a bit of half and half and stir. Continue adding half and half a little bit at a time until the glaze is of spreading consistency. When bars are cooled some, paint with glaze. 24 bars.
