FRUIT TARTS 
These are very elegant and easy!

1/4 lb. butter, softened
1/2 c. sugar
1 egg yolk
1 tbsp. orange juice
1 tsp. vanilla
1 3/4 c. flour

In bowl, beat butter until fluffy. Gradually mix in sugar, mixing well. Add egg yolk, orange juice and vanilla. Mix in flour and press into 2 or 3 inch tartlet molds. Bake at 350 degrees for 15 to 20 minutes or until very lightly browned. Cool in molds for 10 minutes. Remove carefully and fill with your favorite pie filling. Cherry, blueberry and lemon flavors are very good. Pudding can also be used.
