OAT BRAN MUFFINS 
1 c. boiling water
1 c. raisins
1 c. brown sugar
1 c. eggbeaters
1 c. crushed pineapple (drained) or applesauce
2 c. oat bran
2 c. buttermilk
1/2 c. Puritan oil
3 1/4 c. whole wheat flour
1 tbsp. baking soda

Pour boiling water over raisins in large bowl. Add other ingredients and mix until all ingredients are moistened. Spray muffin pans with Pam. Fill pans and bake at 375 degrees for about 20 minutes. Store tight container or Ziplock bags. These muffins freeze well. Makes 30 large muffins or 36 smaller ones.
