CAJUN CHICKEN | |
6 oz. uncooked spaghetti or angel hair pasta 1 stick butter 1 tbsp. plus 2 tsp. Cajun Magic poultry seasoning 3/4 lb. boneless, skinless chicken breasts cut into strips 3 c. sliced mushrooms (about 8 oz.) 1/4 c. minced green onion tops 3 tbsp. minced parsley 1 tsp. minced garlic 1 c. chicken stock or water Cook pasta according to directions. Set aside. Mix butter, cajun seasoning and chicken in medium bowl. Heat large skillet until hot. Add chicken mix and brown about 3 minutes. Add mushrooms and cook 2 minutes. Add green onions, parsley, garlic and stock. Cook 2 minutes until sauce is boiling. Stir in cooked pasta. Stir and shake pan to mix well. Serve immediately. Makes 2 generous servings. |
