MARSHMALLOW PECAN SQUASH 
2 med. acorn squash
1/4 c. chopped pecans
1 tbsp. brown sugar
1 c. miniature marshmallows
1/3 c. saltine cracker crumbs
3 tbsp. butter, divided, melted
1/8 tsp. ground nutmeg

Halve squash, remove seeds and fiber. Place squash, cut side up in a 12"x8"x2" baking dish. Combine cracker crumbs, pecans, 2 tablespoons melted butter, brown sugar and nutmeg. Brush squash halves with remaining butter. Spoon one quarter of the nut mixture into each squash half. Bake, covered, for 50 to 55 minutes at 400 degrees. Uncover baking dish, top each half with 1/4 cup of marshmallows. Bake 4 to 5 minutes or until marshmallows are golden.
