BEEF-SAUERKRAUT SKILLET 
1 tbsp. butter
2 lg. potatoes, peeled & thinly sliced
1 lb. ground chuck beef
1 tsp. caraway seeds (optional)
1 (14 oz.) can sauerkraut
1 med. onion, chopped
1 (8 oz.) can tomato sauce
Salt & pepper

Melt butter in 10" skillet. Spread sauerkraut with liquid evenly in skillet. Sprinkle caraway seeds if used. Arrange potato slices over sauerkraut. Sprinkle with onion. Top with meat and season with salt and pepper. Pour tomato sauce over meat. Cover and simmer for 45 minutes or 1 hour. 4 servings.
