BROWN RICE SALAD 
3/4 c. brown rice
2 c. chicken broth
1/2 c. sliced mushrooms
2 oz. diced pimento
1/4 c. sliced black olives
1 small tomato chopped
3 tbsp. scallions chopped
2 tbsp. salad oil
2 tbsp. red vinegar
1/4 tsp. salt
1/4 tsp. oregano
1/4 tsp. marjoram

Cook rice in broth until done. Cool slightly, add all other ingredients and chill before serving.
