VEGETABLE CASSEROLE 
4 c. vegetables, cooked & drained (broccoli, cauliflower & carrots)
1/4 sm. onion
1 can cream of mushroom soup
1/2 c. mayonnaise
4 oz. shredded cheese
Salt & pepper to taste
1/2 roll Ritz crackers, crushed

Place vegetables and onions in baking dish. Mix soup and mayonnaise together and pour over vegetables. Put cheese over mixture. Sprinkle crackers all over top and bake in 350 degree oven until bubbly and crackers have turned golden brown.
