TORTELLINI SALAD | |
1 (10 oz.) pkg. cheese tortellini 1 sm. green pepper, cut in bite-size strips 1 c. broccoli flowerets 2 carrots, thinly sliced 1/3 c. ripe olives, sliced 3/4 c. mayonnaise 1/3 c. purchased pesto sauce 2 tbsp. grated Parmesan cheese 1 tbsp. olive oil 1 tsp. vinegar 1/2 tsp. pepper 1 clove garlic, minced (optional) Cook tortellini; drain. In a large mixing bowl combine tortellini, pepper slices, broccoli, carrots and olives. For dressing combine remaining ingredients and pour over tortellini mixture; toss lightly until blended. Cover and chill at least 5 hours. Makes 8 side dish servings. 299 calories, 7 g protein, 10 g carbohydrates, 26 g fat, 45 mg cholesterol, 427 g sodium. |
