MIXED PEPPER SALAD 
1/4 c. sugar
3 tbsp. vinegar
2 tbsp. vegetable oil
1/4 tsp. black pepper
1/8 tsp. salt
1 med.-size sweet red pepper
1 med.-size sweet yellow pepper
1 med.-size green pepper

Combine first 5 ingredients in a medium saucepan; bring to a boil, stirring until sugar dissolves. Remove from heat; cool.

Cut peppers into 1/2 inch squares. Add vinegar mixture, stir gently. Cover and chill 8 hours. Yield: about 4 servings.
