POSOLE GUMBO 
1 lg. can stewed tomatoes
1 can posole (hominy), drained
1 can corn (or pkg. of frozen corn)
Cubed, cooked chicken or ham (optional)
Diced green pepper
Diced onion (optional)
Jalapeno pepper, sliced lengthwise
Minced garlic clove (optional)
1 c. frozen sliced okra
2 tbsp. lemon juice
4-6 c. chicken broth
2-3 bay leaves
2 tbsp. olive oil

Saute garlic, onion, green pepper and jalapeno in olive oil. Add tomatoes, posole, corn, okra, lemon juice and broth. Bring to a boil. Add meat if desired, then simmer 15-20 minutes. Discard jalapeno before serving.
