PEPPER JELLY 
3 lg. bell peppers
1 1/2 c. cider vinegar
6 1/2 c. sugar
1/4 c. fresh hot pepper or 2-4 tbsp. crushed dried pepper
1 (6 oz.) bottle Certo
Green food coloring

Remove seeds from peppers. Grind the peppers in blender. Mix with vinegar, sugar, and hot pepper. Bring to rolling boil; boil again and stirring for 1 minute. Pour through strainer into bowl, spoon off foam and add a few drops of green food coloring. Pour into sterilized jars and seal. Serve on top of cream cheese with crackers.
