BRAN MUFFINS 
1/2 c. butter, softened
8 tbsp. sugar
1 1/2 c. flour
1 tsp. baking soda
Pinch of salt
3/4 tsp. cinnamon
1 lg. egg
1 1/2 tbsp. honey
1 1/2 tsp. molasses
3/4 c. raisins
1 1/4 c. bran or oat bran cereal
1 c. buttermilk

1. In a medium mixing bowl, soak the cereal in the milk for about 5 minutes.

2. In a large mixing bowl, cream the butter and sugar until fluffy. Add the flour, baking soda, salt, and cinnamon. Mix well. Add the egg, honey, and molasses and blend well. Mix in the raisins.

3. Add the cereal mixture to the batter and mix well. Spoon the batter into greased muffin tins. Bake at 375 degree oven for 18-20 minutes. Makes 12.
