PINEAPPLE UPSIDE DOWN CAKE 
1/3 c. butter
2/3 c. sugar
2 eggs
2/3 c. water or pineapple juice
3 tbsp. baking powder
1/3 tsp. salt
1/2 tsp. vanilla
1 1/2 c. flour

TOPPING:

4 tbsp. butter
1 c. brown sugar
1 lg. can sliced or cubed pineapple, drained

Cream butter and sugar. Add eggs and water. Mix well. Add flour, salt, baking powder, and beat. Add vanilla.

In a 10 inch iron skillet melt butter. Remove from heat and add brown sugar. Mix well. Arrange pineapple on brown sugar. Gently pour on cake batter. Cook at 375 degrees until top is slightly browned.

Remove from oven cool 10 minutes. Be very careful when you turn this out on a large plate so as not to burn yourself.
