GAZPACHO 
4 c. cold tomato juice
1 sm. onion, well minced
2 c. freshly diced tomatoes
1 c. minced green pepper
1 tsp. honey
1 clove garlic, crushed
1 diced cucumber
2 chopped scallions
Juice of 1/2 lemon or lime
2 tbsp. wine vinegar
1 tsp. tarragon
1 tsp. basil
Dash of ground cumin
1/4 c. fresh chopped parsley
Dash of Tabasco sauce
2 tbsp. olive oil
Salt & pepper to taste

Combine all ingredients and chill at least 2 hours. Takes 20 to 30 minutes to prepare. Serves 6.
