MEATLOAF 
2 lb. ground beef or veal (or mix of both)
2 eggs
2 c. seasoned bread crumbs or matzoh meal
1 (8 oz.) can plain tomato sauce
1 med. onion, grated
1 carrot, grated (optional)

Mix all ingredients together; mix well. Shape into loaf and place in oblong baking dish. Cover with foil. Bake at 350 degrees covered for 1/2 hour. Uncover and bake another 45 minutes.

Variation: Place peeled and quartered potatoes around meatloaf in pan. Pour 8 ounce tomato sauce and 1/2 cup water over potatoes in pan. Increase cooking time 20-30 minutes.
