CHINESE NOODLE COOKIES 
1 c. shortening
1 c. brown sugar
1 c. white sugar
2 eggs
2 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
2 c. coconut
2 c. Chinese noodles
1 tsp. almond extract

Cream shortening and sugars. Add eggs, then flour, baking powder, soda and salt. Add almond. Stir in coconut and noodles.

Drop by teaspoonfuls on slightly greased cookie sheet. Bake at 350 degrees for 10-15 minutes. Yield: 10 cookies.
