BLACK BOTTOM PIE
1 c. evaporated milk
1/2 c. water
3 egg yolks
1/2 c. sugar
1/4 tsp. nutmeg
1/2 tsp. vanilla
1/8 tsp. salt
1 tbsp. Knox gelatin
3 tbsp. cold water
3 egg whites

Heat milk and 1/2 cup water in double boiler with the nutmeg. Beat egg yolks with sugar and salt until light and lemon colored. Pour hot milk over the egg mixture, return to boiler and cook until thick as cream, stirring constantly. Remove from heat. Add the gelatin which has been soaking 5 minutes in cold water. Add vanilla and cool.

When cool and ready to set, beat egg whites stiff and fold into the first mixture. I add 2 tablespoons sugar to egg whites as in a meringue.

Pour into baked pie shell, which has first been covered with grated dark chocolate. Before serving, cover top of pie with whipped cream, topped with grated chocolate. Out of this world!
