CREAMY SHRIMP & PASTA | |
1/4 lb linguini, uncooked 1 cup medium shrimp, peeled, deveined, tails off 2 chopped tomatoes 1/2 cup reduced-fat cream cheese 1 1/2 cups torn fresh, (washed, drained) fresh spinach leaves Cook pasta as directed, drain. Heat a large skillet on medium-high heat. Add shrimp, tomatoes and cream cheese. Cook and stir 3-4 minutes or until mix is well blended. Place pasta in a large bowl. Add spinach, mix lightly.
