CHILI CHEESE GRITS | |
2 1/4 c. water 3/4 c. grits 6 tbsp. unsalted butter 6 oz. processed cheese, cut into 1/2 inch chunks 3 jalapeno peppers, seeds removed and minced 1 med. red bell pepper, chopped 4 chopped green onions 1 tsp. salt 2 eggs, slightly beaten Cheddar and Mozzarella works well, too. Preheat oven to 325 degrees. Butter a 9x13 inch baking dish or casserole dish. Bring water to boil in a heavy 2 quart pan. Add grits; reduce heat to medium, cook, stirring often, until mixture begins to thicken. Remove from heat; stir in butter, cheese, all peppers, green onions and salt. Blend well. Fold in eggs and spoon mixture into buttered baking dish. Bake in oven until bubbly and lightly browned, 45 minutes. Makes 4 to 6 servings. |
