PINEAPPLE-BEEF STIR-FRY
(MICROWAVE)
 
1 lb. boneless beef
1 tbsp. cooking oil
3 tbsp. soy sauce
2 tsp. cornstarch
1 tsp. sugar
1/2 tsp. ground ginger
1/2 tsp. crushed red pepper
1 pkg. frozen cut broccoli, thawed
4 green onions, sliced into 1-inch lengths
1 (8-9 oz.) can pineapple chunks, drained
3/4 c. walnut halves
Hot cooked rice

Partially freeze meat. Cut meat into thin strips; set aside.

Preheat a 10-inch microwave browning dish on 100% power (high) 5 minutes. Add oil; swirl to coat. Add meat. Cook, uncovered, on high 3 to 4 minutes or until tender; stir twice. Remove meat; drain dish.

Combine soy sauce, cornstarch, sugar, ginger, pepper, and 1/4 cup water; add to browning dish. Add broccoli and onions; toss until coated. Cook on high 3 to 6 minutes or until vegetables are crisp-tender; stir every 2 minutes. Add meat and pineapple. Cook on high 1 to 3 minutes or until hot. Stir in nuts. Serve with rice. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
