CHICKEN GUMBO 
1 med. sized onion, chopped
1 med. sized sweet green pepper, seeded and chopped
2 tbsp. butter
4 c. chicken broth
1 1/2 c. cubed uncooked chicken breast
1 c. fresh or frozen okra
1 c. chopped fresh tomato
3/4 c. uncooked white rice
1/4 tsp. each black pepper, chopped garlic and onion powder
1/8 tsp. cayenne pepper

Saute' onion and green pepper in butter in saucepan for 5 minutes or until vegetables are softened. Stir in borth, chicken, okra, tomato, rice, pepper, garlic, onion powder, and cayenne. Simmer, uncovered for 25 minutes or until rice is tender and chicken is cooked through. Serves 10.
