STUFFED MEATLOAF 
2 eggs, beaten
3/4 c. soft bread crumbs
1/2 c. tomato juice
2 tbsp. parsley
1/2 tsp. oregano
1/2 tsp. salt
1/4 tsp. pepper
1/2 clove garlic
2 lbs. ground beef
6 - 9 oz. mozzarella cheese, shredded
3 slices mozzarella cheese

Preheat oven to 350 degrees. Combine all ingredients except meat and cheese. Mix in ground beef. Form 10 x 12 inch rectangle on waxed paper. Sprinkle cheese almost to edge. Beginning at short side, roll up meat, sealing edges and ends. Place seam side down in 9 x 13 inch baking dish. Bake 1 1/4 hours. Place cheese slices over top and return to oven to melt. Serve 8 to 10.

Note: Thin broiled ham slices may be used as stuffing under grated cheese.
