PECOS BEAN SOUP! 
1 lb. dry pinto beans
2 1/2 qts. water
1/2 c. chopped onions
1 clove garlic, minced
1 lg. piece bacon rind
1 tbsp. chili powder
1/2 tsp. oregano
1 (4 oz.) can peeled, seeded, diced green chili peppers
2 tsp. salt

Wash beans and soak overnight in cold water; drain. Put beans in a large kettle. Add 2 1/2 quarts water and simmer 1 hour. Add onions, garlic, bacon rind, chili powder, oregano, and chili peppers. Cover and simmer 2 hours, adding salt the last hour (makes 6 servings).
